Easy Baked Granola Whole-Food Plant-Based by shannontorrens.com

Ingredients

  • 6 Cups Rolled Oats
  • 2 Cups Pitted and Chopped Dates
  • 2 1/2 Cups Water
  • 2 teaspoons Vanilla Extract
  • 1 teaspoon salt
  • 1-2 teaspoons Cinnamon (you can add more if you like)
  • Optional Ingredients:
  • 1/2 Cup Pepita Seeds
  • 1/4 Cup Maple Syrup
  • 1/4 Cup Raw Sunflower Seeds
  • 2/3 Cup Dried Fruit like raisins
  • 1 Cup Almonds ground up
  • 1/2 Cup Walnut Pieces ground up

Instructions

  1. Preheat Oven to 275F
  2. Add the oats to a large bowl and set aside. (Add the optional ingredient: pepita seeds, sunflower seeds, dried fruit, ground almonds, ground walnut pieces).  Line two 13x18 baking pans with parchment paper.
  3. Place dates and 2 1/2 cups water into a medium pan, boil and cook over medium heat for 10 minutes.
  4. Remove the mixture from heat and add it to a blender with cinnamon, vanilla, and salt. (optional add 1/4 cup maple syrup) Blend until smooth.
  5. Add the date mixture to the large bowl of oats plus the optional ingredients. Mix well!
  6. Divide the Granola between the prepared pans and push it down evenly. Bake for 40 to 50 minutes at 275F, stirring every 15 - 20 minutes, until the granola is light brown and crispy. Remove from oven and let it cool before eating.
