Ingredients
6CupsRolled Oats
2CupsPitted and Chopped Dates
2 1/2CupsWater
2teaspoonsVanilla Extract
1teaspoonsalt
1-2teaspoonsCinnamon (you can add more if you like)
Optional Ingredients:
1/2CupPepita Seeds
1/4CupMaple Syrup
1/4CupRaw Sunflower Seeds
2/3CupDried Fruitlike raisins
1CupAlmondsground up
1/2CupWalnut Piecesground up
Instructions
Preheat Oven to 275F
Add the oats to a large bowl and set aside. (Add the optional ingredient: pepita seeds, sunflower seeds, dried fruit, ground almonds, ground walnut pieces). Line two 13x18 baking pans with parchment paper.
Place dates and 2 1/2 cups water into a medium pan, boil and cook over medium heat for 10 minutes.
Remove the mixture from heat and add it to a blender with cinnamon, vanilla, and salt. (optional add 1/4 cup maple syrup) Blend until smooth.
Add the date mixture to the large bowl of oats plus the optional ingredients. Mix well!
Divide the Granola between the prepared pans and push it down evenly. Bake for 40 to 50 minutes at 275F, stirring every 15 - 20 minutes, until the granola is light brown and crispy. Remove from oven and let it cool before eating.
