Easy Baked Granola
This delicious baked granola is easy to make and plant-based. It is also free of sugar and oil, which are common in most recipes.
This easy whole-food plant-based granola recipe has taken the place of the granola we used to buy from the store. The whole family enjoys this as breakfast or a simple snack.
The best thing about this granola is how customizable it is! Add dried fruit, seeds, or nuts, depending on what you like. For a slightly sweeter version, add maple syrup or leave it out for less sugar.

Ingredients:
6 Cups Rolled Oats
2 Cups Pitted and Chopped Dates
2 1/2 Cups Water
2 teaspoons Vanilla Extract
1 teaspoon salt
1 to 2 teaspoons Cinnamon (or more if you like it)
Optional Ingredients:
1/2 Cup Pepita Seeds
1/4 Cup Maple Syrup
1/4 Cup Raw Sunflower Seeds
2/3 Cup Dried Fruit (like raisins)
1 Cup Almonds (ground up)
1/2 Cup Walnut Pieces (ground up)
Baked Granola Instructions
1. Preheat Oven to 275F
2. Add the oats to a large bowl and set aside. (Add the optional ingredient: pepita seeds, sunflower seeds, dried fruit, ground almonds, ground walnut pieces). Line two 13×18 baking pans with parchment paper.
3. Place dates and 2 1/2 cups water into a medium pan, boil and cook over medium heat for 10 minutes.
Remove the mixture from heat and add it to a blender with cinnamon, vanilla, and salt. (optional add 1/4 cup maple syrup) Blend until smooth.
4. Add the date mixture to the large bowl of oats plus the optional ingredients. Mix well!
5. Divide the Granola between the prepared pans and push it down evenly. Bake for 40 to 50 minutes at 275F, stirring every 15 – 20 minutes, until the granola is light brown and crispy. Remove from oven and let it cool before eating.
