These yummy avalanche cookies are easy to make when you don’t have much time to bake. You can also make them vegan by choosing the vegan options for all these ingredients.

Avalanche cookie ingredients

Ingredients:
12 oz. white chocolate chips (can be found vegan if searched out)
2/3 cup creamy peanut butter
2 cups rice krispies cereal (or vegan puff cereal)
1 1/2 cups miniature marshmallows (mini vegan marshmallows)
1/3 cup miniature chocolate chips (there are a vegan options for this too)

Directions With Photos:
Add the white chocolate chips and peanut butter to a microwave-safe bowl.

Heat in 30-second increments, stirring well in between, until melted.

Add the rice Krispie cereal, mini marshmallows, and half of the chocolate chips to a large mixing bowl.

Once the chocolate and peanut butter mixture have cooled, pour into the mixing bowl.

Toss everything together until the ingredients are well coated and the chocolate is evenly distributed.

Drop this mixture by large spoonfuls onto a parchment lined cookie sheet.
